Training for a marathon while working at a very busy creative agency, Erin needed a fuss-free, healthy snack she could nibble on throughout the day one that was clean (no junk!) and wouldn't disrupt her blood sugar levels or her allergies. She couldn't find what she was after so she made her own and Nibble Simply was born.
