Nicole is a Jamaican-born Londoner whose passion for Caribbean cooking began with watching her mum, a Kingston market trader, transform fresh herbs and spices into vibrant family recipes. Inspired by her mum’s cooking, she set out to capture its flavour and positivity as “sunshine in a sauce”. In 2023, she brought that vision to life with Nimi Nosh, celebrating bold, authentic Caribbean flavours for pouring, dipping and quick marinades.
