Lucy spent years running an investment fund but all the while dreamt of starting a British vineyard that makes wine without grapes. She didn't know how to build it until she met Kim Wilson, a drinks formulator tired of watching her work carry someone else's name. Lucy put in her life savings; Kim remortgaged her home. Together they taught themselves to turn tea, apples, honey and verjus into a sparkling wine alternative, and launched House of Sablière in 2024.
